You have all seen ‘em. Well, at least if you’re on Pinterest like me then you have. These no bake energy bites seemed too good to be true, and then I made them and must say, I wasn’t disappointed. They are delicious, semi-healthy and perfect for road trips or an easy breakfast. They make an appearance in our kitchen at least twice a month. Big shout out to gimme some oven for sharing her secret!
Ingredients
- 1 cup (dry) oatmeal (I used old-fashioned oats)
- 2/3 cup toasted coconut flakes
- 1/2 cup peanut butter
- 1/2 cup ground flaxseed or wheat germ
- 1/2 cup chocolate chips (optional)
- 1/3 cup honey
- 1 tsp. vanilla extract
Note: Matt and I are not a fan of the coconut flakes so I always leave that ingredient out.
Stir all ingredients together in a medium bowl until thoroughly mixed. Let chill in the refrigerator for half an hour. Once chilled, roll into balls of whatever size you would like. Store in an airtight container and keep refrigerated for up to 1 week.
Makes about 20-25 balls.

I think it’s great to see this! It’s not always inexpensive to take a big family out to a baseball game and the Cubs are helping make it happen. Here’s to creating a lifetime of memories on the cheap! Let’s play ball!

These are just a few of my favorites - but there is always something going on in the city to check out over the holiday season - I love it!
